The best part about easter is the cheap chocolates after the easter break. I'm going to be living off hot choc buns for the next week, yum! Speaking of food, during the easter weekend i made delicious butter muffins, they're the ones in the picture but i also put a frosting on them. They were pretty basic, but so delicious. Basic Butter Muffins

Muffin Ingredients:
185 g butter, softened
128 g (1 cup) caster suger
1 teaspoon vanilla essence
3 large eggs
256 g (2 cups) self-raising flour
¼ cup milk

Method:
1. Preheat oven to 180ÂșC.
2. Mix the butter, caster sugar and vanilla until light and creamy.
3. Add the eggs, making sure they’re mixed in well.
4. Sift the flour over the mixture while adding milk a third at a time. Stir lightly.
5. Either butter muffin tins, or use a muffin cup. Bake for 20-30 mins, or until golden brown.
6. Cool muffins on cooling rack until cold.

Icing Ingredients:
125 g butter
80 g icing sugar

1. Melt butter slightly
2. Mix in icing sugar till smooth.
3. Place mixture into a zip-lock bag or plastic bag. Cool mixture in the fridge for 5-10 mins.
4. Cut a hole at the bottom corner of bag and squeeze mixture onto muffin top.

  1. Those cakes look like they turned out fab. I made some myself a week ago when I was visiting some family, and the thing came out looking like a wonky version of Mount everest haha. Not great. :)

  3. Thanks for the comments. I didn't have any easter eggs to put in the muffins, but what a great idea, i might go get some eggs just for that purpose.
